I was hoping there was a way that's easier than this because it is AN ENORMOUS PAIN to try to color the edge carefully, fill, and then go over the annoying white line when doing flat colors.
My solution is to use the smart snapping lasso tool, go around the edge of the part you want to color, and then fill. It's almost always flawless, although it is a bit punishing if you move your mouse/stylus too fast.
